HISTORY & ARCHITECTURAL CONTEXT

On the day it was checked, the directorate’s cheese-museum page still carried only a note that work was in progress. The mapped building nevertheless sits beside the Kars River in the restored Süvari Bastion, also called Derecik or Dere Tabya, and the galleries show gravyer vats, kaşar brine, and a yayla dairy. Boğatepe is not this address. It is the high-meadow village where gravyer is made, and it asks for an outing of its own.

Why visit

To see the kaşar wheels in the brine tank, and the layout of a yayla kitchen, under the rough stone vault of the bastion.

VISITOR TIP — WHAT NOT TO MISS

The dairy figures indoors belong to the display; to read the stone vault, look at the upper wall rather than the case labels.
